Zucchini bread was always a staple in our house. I can still remember the smell of Mom’s fresh zucchini bread baking in the oven. It was so good! My parents had a garden that was full of zucchini, so my mom made it often. Let me tell you those things grew to be enormous! I think for a period of time we had zucchini everything! My Mom had to get creative with recipes for sure! We gave away tons of those zucchini, but they kept on coming. We would crack laughing about how many that there actually were and wondering what my dad was putting in the soil! I sure miss those days.
Mom passed away 7 years ago. I still can’t believe that those words are coming out of my mouth. She was my best friend in the whole world. The pain of losing your special person that you’ve known your entire life is unbearable to say the least. She was amazing and taught me everything I know, except how to deal with her not being here one day.
To those of you that may not know, Mom is the whole reason behind Create Make Decorate. I started this journey as a way to honor her memory and help me get through her loss. I remember on one of our visits, mom told me that one day when she was gone, certain things would become my job. That I would be the next in line to carry on certain traditions. Making zucchini bread was one of them. I know that there is no possible way that I could ever fill her shoes as those were some big shoes to fill. But, one thing I know is that I can make her zucchini bread!
The Tradition continues!
My husband now has a beautiful garden that grows a lot of zucchini! Here is one fresh picked from his garden. The tradition of growing huge zucchini lives on! It’s absolutely perfect for mom’s zucchini bread recipe.
Let’s get started!
You will first want to start by mixing your dry ingredients and your wet ingredients separately.
QUICK TIP: I LIKE TO CRACK MY EGGS INTO A SMALL BOWL AND THEN ADD THEM TO THE MIX. THIS HELPS TO NOT GET ANY EGG SHELLS IN THE MIX.
Mom’s recipe does not require you to drain the zucchini. Just shred it up and plop it in there. The moisture from the zucchini helps to make the bread moist.
The secret ingredient for Mom Zucchini Bread Recipe is chocolate chips! Anything that requires chocolate is a winner in my book! After you have mixed the dry ingredients to the wet ingredients, fold in the chocolate chips. Be careful not to over mix your batter. If you do, it will cause it to be dense and dry.
Pour the batter into two greased bread loaf pans and bake at 350 degrees for about 50 minutes. Of course, this time varies depending on your oven.

Mom’s Zucchini Bread Recipe:
- 3 1/4 CUPS ALL-PURPOSE FLOUR
- 1 1/2 TSP. SALT
- 1 TSP. GROUND NUTMEG
- 2 TSP. BAKING SODA
- 1 TSP. GROUND CINNAMON
- 2 1/2 CUPS SUGAR
- 1 CUP VEGETABLE OIL
- 4 EGGS, BEATEN
- 1/3 CUP WATER
- 2 CUPS GRATED ZUCCHINI
- 1 TSP. LEMON JUICE
- 1 CUP CHOCOLATE CHIPS
- 1 CUP CHOPPED WALNUTS, OPTIONAL
DIRECTIONS:
Pre-heat the oven to 350 degrees. In a large bowl combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients in with the dry ingredients, until well combined. Be careful not to over mix. Fold in chocolate chips and walnuts. Bake in 2 standard loaf pans, sprayed with non-stick spray for 55-60 minutes. ENJOY!!
