Summer is here and that means that it’s barbecue season! Along with those burgers and hotdogs you need a good side dish recipe. Macaroni salad pairs well with pretty much any barbecue meal and it’s so easy to make. My go to is always my Mom’s Simple Macaroni Salad Recipe. It’s very inexpensive to make as it only requires a few ingredients.
When it comes to Macaroni Salad, I think the more simple the better. Of course, that is my preference and you make think otherwise and that’s Ok! But, if you happen to be looking for an easy and quick recipe, this is one to give a try!

Mom’s Simple Macaroni Salad Recipe will remind you of the kind that you grew up eating as a kid. Back in those days things were a lot more simple and there certainly were not as many choices as there are today. This macaroni salad has a bit of nostalgia to it and will bring you back to those good ol’ days! It is both creamy and crunchy and what better combo is that? It also is a great base to add whatever add ons that you like in your macaroni salad.
Ingredients Needed:
- 1 box of Ditalini or elbow Macaroni
- 1 small chopped Onion
- 2-3 Celery Stalks, chopped
- 4 Hard Boiled Eggs
- 1-2 cups of Mayonnaise (I prefer Best Foods)
- Pepper
- Seasoning Salt (I prefer Lawry’s )
Additional Add-ons
- 1/4 cup chopped Red Bell Pepper
- 1/4 cup Small cooked shrimp
How to make Mom’s Simple Macaroni Salad
Begin by cooking your pasta according to package directions. In a separate pot, boil your eggs. Here’s a TIP that I learned when hard boiling my eggs, add 1 tsp. of white vinegar or 1 tsp. of baking soda to the water to make them easier to peel. Believe it or not it works!
While those are cooking, finely chop the onion and celery.
Once the eggs have cooled, give them a rough chop. Starting with the pasta noodles, add all the ingredients into a large bowl and mix. Adjust your mayonnaise and seasonings according to your taste. Sprinkle the top with Seasoning Salt and Pepper and that’s it!
*** My Mom always added small cooked shrimp into her recipe, but not everyone in my family likes shrimp. So, I stick with the basic recipe. However, it is really good with the shrimp addition! ***
That’s all there is to it!
I can’t wait to have this tonight as a side to go along with some yummy grilled hamburgers! But, I think that I will have a little sampler before then!
