Method
- In a large pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in tomatoes, chicken broth, water, chili powder, oregano and cumin. Bring to a boil and simmer 5-10 minutes.
- Stir in zucchini, green chiles, beans and chicken. Bring to a boil and simmer for about 30-45 minutes.
- Pour into bowl using a ladle. Squeeze in fresh lime juice. Top with crushed tortilla chips, avocado slices, cheese, cilantro and chopped green onion.Enjoy!
Notes
- Rotisserie chicken works great for this recipe, but you can use chicken breast.
- Get creative using additional ingredients such as corn.
