Homemade Chicken Tortilla Soup

This chicken tortilla soup is a hearty and flavorful soup that is always a crowd pleaser.

Ingredients
  

  • 1 rotisserie chicken, shredded
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, chopped
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 3-4 tsp chili powder
  • 1 28 oz can crushed tomatoes
  • 32 oz chicken broth
  • 1 1/4 cups water
  • 1 15 oz. black beans, rinsed and drained
  • 1 15 oz. pinto beans, rinsed and drained
  • 1 4oz. chopped green chiles
Garnish
  • 2 cups crushed tortilla chips
  • 1 sliced avocado
  • 2 cups shredded Monterey Jack Cheese
  • 1/2 cup chopped green onions
  • fresh, squeezed lime juice
  • cilantro, chopped

Method
 

  1. In a large pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in tomatoes, chicken broth, water, chili powder, oregano and cumin. Bring to a boil and simmer 5-10 minutes.
  2. Stir in zucchini, green chiles, beans and chicken. Bring to a boil and simmer for about 30-45 minutes.
  3. Pour into bowl using a ladle. Squeeze in fresh lime juice. Top with crushed tortilla chips, avocado slices, cheese, cilantro and chopped green onion.
