If you love Gingerbread cookies and Snicker doodles, you are going to love these cookies! I call them The Best Gingerdoodle Cookies because they are the combination of both. They are like Christmas in a cookie! The flavors of cinnamon and ginger make for a festive cookie that are the perfect addition to your Christmas cookie baking day!
Christmas is only a few days away and I’m a little late on getting my baking started. Usually we have a whole day planned with the family and bake, but this year is a little different. In addition to a few other cookies that I am baking this year, this is on the top of my list along with my Mom’s Zucchini Bread. You can find her recipe here.
These Gingerdoodle cookies are moist , chewy and all things yummy. They are also quick and easy to make. After trying this recipe, I am sure that you will be adding it to your list of cookies for the Holidays!

RECIPE: (Yields 2 dozen)
- 3/4 CUP SALTED BUTTER, SOFTENED
- 1 CUP BROWN SUGAR
- 1 LARGE EGG
- 1/4 CUP MOLASSES
- 2 1/4 FLOUR
- 2 TSP. BAKING SODA
- 1 TSP. CINNAMON
- 1 TSP. GINGER
- 1/2 TSP. GROUND CLOVES
- 1/4 TSP. SALT
- 1/4 CUP SUGAR (FOR ROLLING COOKIES)
HOW TO MAKE GINGERDOODLES COOKIES:
STEP 1: Pre-heat oven go 375 DEGREES. Grease a cookie sheet or line with parchment paper. Combine butter and sugar in a large bowl and beat together until well blended. Add the egg and beat until smooth. Next, add the molasses and beat until well combined.
STEP 2: In a separate bowl, mix together flour, baking soda, cinnamon, ginger, cloves and salt. Add to the butter mixture.
STEP 3: Scoop by the tablespoon or I like to use this cookie scoop. It helps ensure that all of your cookies are the same size. Roll them into a ball and then into the sugar. Place onto the cookie sheet about 2 inches apart. Bake 7 to 8 minutes. Remove and place on a cooling rack.
As an added option, dip half of the cookie in melted white chocolate. It takes the decorative element up a notch and tastes good too!
HOW TO STORE YOUR COOKIES!!!
I recommend storing your ginger doodle cookies in an airtight container for up to 4 days. You can also freeze them if you are baking ahead of time.
